Position Highlights

Assistant Head Bartender. Second in charge of the bars, your core purpose is to lead the team through each shift so that service, standards, security and beverage cost all stay on track. You will assign and monitor staff, train and coach bartenders, check equipment and pars, control requisitions and inventory, and check with guests on service and drink quality.

Key Responsibilities

  • Monitor staff attendance and grooming, review staffing needs and hand out assignments, and hold pre-shift meetings as needed
  • Review the logbook, VIP report, group activities, house count and catering activities
  • Monitor staff throughout the shift, go through the Supervisor's checklist, prioritize duties and follow up on pending issues
  • Check equipment, sound and lighting, and raise and follow up on work orders with Engineering
  • Train and orient new employees on Standards of Performance, and coach, counsel and discipline consistently and fairly
  • Handle payroll forms, report undesirable visitors to security, and report accidents and injuries following hotel procedures
  • Ensure bar policies and procedures are followed, establish and monitor garnishes, and develop a recipe list for the 100 most popular drinks
  • Review beverage cost, establish and check pars, control bartenders' requisitions, and take monthly equipment and beverage inventories with the Cost Controller
  • Distribute and discuss the special events and promotions calendar, and talk to guests about service and beverage quality
  • Maintain security for open and closed bars, check beverage coupons, and follow alcohol awareness guidelines
  • Turn in the Food & Beverage checklist daily to the F&B Manager, and be familiar with the property's fire and emergency program

Requirements, Skills & Traits

Requirements:

EPI/MBO diploma or a minimum of 5 years of experience as a bartender. Bartender diploma. Fluent in English, Spanish and Dutch. Must have a valid Health Card. Must hold a Dutch passport or a valid work permit.

Core Skills:

Bar operations, standards and recipes. Staff scheduling, training and performance management. Beverage cost control, pars and inventory. Great computer skills and suggestive (up)selling. Food safety and HACCP guidelines.

Soft Skills:

Service oriented leader who coaches fairly and consistently. Organized and composed during busy shifts.

Success Metrics

Bars are properly staffed and run to standard, beverage cost and inventory are under control, staff are trained and performing well, and guests are satisfied with service and drink quality.
